Recordare Ancestral is a natural sparkling wine made following the ancestral method, expressing purity, freshness and craftsmanship. Produced in extremely small quantities, it is a unique wine.

Vineyard & Winemaking

Hand-harvested grapes are gently pressed, using only the free-run juice. The base wine ferments in stainless steel with indigenous yeasts, followed by a second fermentation in bottle. Disgorgement is done manually, respecting the natural character of the wine.

The sandy soils and multiple vineyard plots contribute to its complexity and freshness.

• Aroma: Fresh pear and apple, stone fruit, subtle bakery notes and creamy hints from lees ageing

• Palate: Lively, fresh and broad, with fine and persistent bubbles

Ageing: 18 months on lees + 6 months without lees
Residual sugar: < 2 g/L
Production: Only 800 bottles
